Organic Gardens & Biodiversity

The estate is managed as a living sanctuary. No pesticides are used; gardeners rely on organic remedies such as nettle purin and ladybugs for natural balance. Compost from the kitchens enriches the soil, and wild hedgerows and meadows are deliberately preserved to shelter birds, frogs, and hedgehogs.

In spring, guests may spot rare protected orchids blooming on the grounds, evidence of the estate’s commitment to biodiversity and ecological stewardship.

Michelin-Starred Farm-to-Table Dining

At its heart, Les Prés d’Eugénie is a temple of gastronomy with three restaurants. Michel Guérard pioneered a farm-to-table “naturalist” cuisine long before it became fashionable. Herbs and edible flowers are picked fresh each morning from the gardens, while vegetables come from a trusted organic farm in nearby Gers that has supplied the Guérards since 1978.

Menus shift constantly to match the seasons — sometimes reprinted every few days — and out-of-season or long-haul ingredients are avoided. Vegetarian tasting menus showcase haute cuisine at its most sustainable, while meats and poultry are sourced exclusively from humane local farms in Chalosse and the Pyrénées.

The kitchen minimizes waste through inventive reuse, staff meals, and bulk sourcing. Even Nespresso capsules have been eliminated in favor of bulk beans, reflecting a zero-waste culinary philosophy.

Spa & Thermal Wellness

The Ferme Thermale Spa is fed by the village’s natural thermal springs and housed in historic farm buildings renovated with reclaimed wood and local stone. Treatments use organic, plant-based products, including herbs harvested on-site. Guests can enjoy open-air hydrotherapy baths, herbal teas, and massages in garden pavilions.

In 2023, the spa partnered with L’Occitane to become the world’s first Ecocert-certified Sustainable Spa, cementing its role as a global leader in eco-wellness.

Energy Efficiency & Green Mobility

Recent renovations brought geothermal heating and cooling to the entire estate, significantly reducing fossil fuel use. The property also offers 12 electric vehicle charging stations, making it easy for guests to arrive sustainably. Paper use has been cut through digital check-in, e-menus, and electronic guest information, while LED lighting reduces energy consumption across the estate.
