- Mix the dry ingredients. In a large mixing bowl, combine both types of oats, almonds, cashews, puffed quinoa, oat bran, and chia seeds if using.
- Melt the wet ingredients. In a small saucepan, add the applesauce, coconut oil, agave or honey, and coconut sugar. Warm gently over low heat until everything is melted and smooth.
- Preheat the oven. Set it to 150°C (300°F).
- Combine everything. Pour the warm liquid over the dry ingredients and mix thoroughly until every flake and nut is coated.
- Spread it out. Line a baking tray with parchment paper and spread the granola in an even layer, about 1 cm thick.
- Bake and stir. Bake for 30 minutes, stirring every 10 minutes and spreading the granola back out evenly after each turn to ensure it cooks uniformly and gets nicely toasted.
